Tips for making the best sheet pan eggs.
Using a rimmed sheet pan is essential for this recipe in order to hold the ingredients in place. Also, make sure that your sheet pan is large enough to make this recipe in.
More helpful tips for you.
- It is best to use oil rather than lining the baking sheet in this recipe as the batter can travel and end up under whatever you have lined your pan with.
- I would also use a newer baking sheet that has not blackened yet as a blackened baking sheet tends to bake faster and hotter.
- Using a large mixing bowl with a spout will make it easier to transfer the ingredients to the baking sheet for baking.
- The best way to transfer the blended ingredients to the sheet for baking is to first place the sheet pan into your oven and then transfer the mixed ingredients into it.
- Oven temperature makes a difference when baking this recipe. My eggs were baked at 375. A higher temperature (such as 400) will create crispier edges, while lower temperatures (like 350) will result in a softer set.
- Over-whisking or mixing your eggs can incorporate too much air, leading to puffy and unevenly baked eggs. If you find that your eggs have puffed up while baking let them cool for up to five minutes or until eggs are settled before slicing into servings.

Prep Time: 5 minutes .
Bake Time: 20 minutes .
Servings: 12, depending on how the eggs are sliced.
- Preheat your oven to 375. Use pastry brush or similar item to evenly spread the oil over baking sheet including the sides of the rim.
- You can use a bowl and whisk, blender, or food processor to combine the base ingredients together. Combine the base (eggs, cream, and seasonings) ingredients together until just combined (not frothy- avoid overmixing). Then use a rubber spatula to fold in any optional ingredients (veggies, meats, etc.).
- Place your prepped baking sheet in your oven and then carefully transfer the mixed ingredients to the pan.
- Carefully sprinkle the cheese on top of the ingredients in the pan.
- Bake your eggs for 17-20 minutes, or until the eggs are mostly set and no longer jiggly in the center.
- Let the eggs set on the pan for a couple of minutes before slicing into servings.
Expert Tip👉 Keep an eye on your eggs while they are baking. Your eggs should be soft in the center when you take them out of the oven. Over-cooked eggs are rubbery in texture and not as enjoyable.
How to store baked eggs.
Once your oven baked eggs have fully cooled, they can be stored in an airtight container.
When properly stored, these eggs should keep for up to three days refrigerated or up to a few months when frozen.
