    Homemade Banana Bread Cinnamon Rolls

    What you need to make banana bread rolls.


    Dough.

    • Milk. Warm (110°F) to help activate the yeast.
    • Active Dry Yeast Make sure that you are using 'active' and not another kind of yeast.
    • Sugar. Use granulated sugar.
    • Banana. Use a ripe banana that has been mashed.
    • Butter. Your butter should be melted and cooled to room temperature. If you are using unsalted butter you can add a teaspoon of salt to the flour.
    • Vanilla extract. For a bit of flavor balance.
    • Flour. Regular all purpose flour.


    Filling.

    • Butter . Softened to room temperature. Unsalted is preferred.
    • Brown Sugar.
    • Ground Cinnamon.
    • Optional Chopped walnuts or pecans.

    Glaze topping.

    • Powdered Sugar.
    • Cream Cheese. Softened to room temperature. Use a full fat cream cheese for an optimal creamy topping.
    • Milk. A full fat milk helps to make a more creamy topping.
    • Vanilla Extract.

    How to make Banana Bread Cinnamon Rolls.

    Prep Time: 2 hours. This includes rising time since we are using yeast .
    Bake Time: 25 minutes. .
    Servings: 12 .
    How to Serve: Serve warm with milk, tea, or coffee.
    Notes: You will need a 9x13-inch baking or casserole dish for baking your rolls in. .

    1. Dough. In a large mixing bowl, combine together your mashed banana, melted butter, vanilla and salt, mixing on low for one minute. Gradually add the flour to the bowl and when a soft dough forms you can transfer the dough to a lightly floured works surface and knead it until smooth (about five minutes).
    2. Rise. Transfer the dough to a clean bowl that has been greased (I use butter). Place a clean kitchen towel over the top of the bowl and allow the dough to double in size (about an hour).
    3. Filling. In a small bowl, use a whisk or a fork to combined together the brown sugar and cinnamon. On a clean workspace that has been lightly dusted with flour, roll your dough out into a 12x18-inch rectangle. Then use a butter knife of pastry brush to evenly spread the butter over the rolled out dough. Sprinkle the brown sugar and cinnamon mixture over the butter along with the chopped nuts.
    4. Roll. Grease your baking dish well for nonstick. Then, starting at a long side of your dough, tightly roll the dough up. Then slice the dough in half and continue to slice the the halves in half until you have 12 rolls. Place the rolls into your greased baking dish, lightly cover with a clean kitchen towel, and allow the rolls to double in size again (about 30-45 minutes).
    5. Bake. Preheat the oven to 350°F. Place the rolls in the center of your oven and bake until the top begins to turn brown. (about 25 minutes).
    6. Glaze. To make the cream cheese glaze, combine together the powdered sugar, cream cheese, milk, and vanilla extract until smooth without chunks. Use a large spoon to drizzle or dollup the glaze over the rolls while they are still warm so the the glaze can cover the rolls.

    Tips for making the best cinnamon banana rolls.

    The is a yeast bread recipe which means that the bread needs to have time to rise (twice) in order for the rolls to have a light and fluffy texture. Make sure that these steps are followed for the correct amount of time.

    1. When I use a yeast rising dough recipe, I like to place my rising covered dough on top of my refrigerator. This is the perfect warm location in my kitchen and also a place that will allow the dough to rise undisturbed.
    2. It is essential that you use 'ripe' (brown spots or almost black). Very ripe bananas have the best flavor and they will also combine with the other ingredients better, making for a smooth batter and soft roll texture.
    3. Kneading the dough is also an important step in this recipe. You should knead your dough until it is smooth, elastic, and is no longer sticky or is just slightly sticky . Avoid over-kneading as this can ruin the texture of your rolls.

When properly stored, these rolls can keep for up to a couple of days at room temperature, up to five days when refrigerated, or up to a couple of months when frozen.
