    • Olive Oil. Used in sauteing the vegetables.
    • Onion. Your onion should be diced or chopped.
    • Carrots. Also diced or chopped.
    • Celery. Sliced .
    • Garlic. Your garlic can be minced or chopped.
    • Broth. For vegetarian or vegan, use a vegetable broth. Chicken or beef can be used for non-vegan/vegetarian soup.

    How to make Instant Pot Bean Soup


    Prep Time: 10 minutes.
    Yield: 6 servings.
    Cook Time: 40 minutes .

    1. If you have not done so, prepare your dried beans as indicated to make sure that they are clean and free of debris.
    2. Saute your vegetables. Place the olive oil into your pressure cooker and top it with the chopped onion, carrots, celery, and garlic. Set the to "Sauté" mode and cook until they begin to soften (3-5 minutes).
    3. Add the other ingredients. Next, add the rinsed beans, broth, diced tomatoes, herbs and seasonings to the pot. Stir the ingredients together.
    4. Close the lid of the Instant Pot and set the valve to the sealing position. Cook on high pressure for 40 minutes.
    5. Allow the pressure to release naturally (for about 15-20 minutes).
    6. Carefully switch the valve to "Venting" to release any remaining pressure.
    7. Next, carefully open the lid, taste the soup, and adjust seasoning if needed.
    8. Serve the soup with garnishes as desired.

    How to store leftover bean soup.

    Once the soup has fully cooled, it should be stored in an airtight container or zip top bag. If properly stored, this soup should keep for about five days when refrigerated or up to a few months when frozen.
