    Ingredients needed to make Spicy Thai Peanut Noodle in an Instant Pot

    • Sesame Oil. This is used for sautéing the vegetables.
    • Bell Pepper. Red and Green sliced in a 'Julienne' style.
    • Carrot. Also sliced in a 'Julienne' style.
    • Green Onions. Chopped small.
    • Purple Cabbage . This adds a nice touch of color. It should also be chopped small.
    • Garlic. Your garlic should be minced.
    • Ginger. While freshly grated is preferred, ginger powder can be used in this recipe.
    • Noodles. Spaghetti noodles were used to make my noodles as they are sturdy size and consistency.
    • Vegetable Broth. Used for cooking the ingredients in. You can really use any flavor broth.
    • Olive Oil. Used for sautéing the noodles.
    • For the sauce you will need peanut butter, white vinegar, soy sauce, brown sugar, and sweet chili sauce.
    • Toppings, chopped peanuts, diced or chopped cilantros, and sesame seeds.

    Tips for making the best Spicy Thai Peanut Noodles

    Using fresh vegetables is preferred in this recipe. When sauteing your vegetables, it is important to not overcook them as they add a crunchy elements and fresh flavor to this recipe.

    More helpful tip for you.

    1. When you add your noodles to the pot, make sure that they are covered by the broth. You can use a wooden spoon to push them down if needed but, try not to stir them.
    2. For the sauce, using a fresh with few added ingredients in it is important for a smooth sauce. While you can use a crunchy or smooth peanut butter, you may want to stir it first.
    3. I would not use organic peanut butter as it can have a layer of oil on top which can affect your sauce.
    4. For an added kick, you can add a bit of sriracha or a chopped jalapeno.
    5. Stirring in additional vegetables, such as broccoli or peas, can make this dish even more filling and flavorful.
    6. For a protein addition, stir in sliced cooked chicken, shrimp,or tofu before serving.
    7. Not a fan of spicy? Swap out the chili sauce with ketchup.

    How to make Instant Pot Spicy Thai Peanut Noodles

    Prep time: 15 minutes
    Cook time: 20 minutes
    Servings:4

    1. Start by sautéing your vegetables. Set the pot to sauté and add the sesame oil to the pot. You can swirl the oil around to cover the bottom of the pot.
    2. Add the peppers, green onions and cabbage to the pot and sauté for 10 minutes. Then transfer the vegetables to a large bowl and stir in the minced garlic and ginger.
    3. Next, deglaze the pot by swirling around a tablespoon of the broth around the bottom.
    4. To cook the noodles, add the noodles to the pot in layers that are in criss-cross pattern. You may want to break the noodles in half so that they can fit better. Then cover the noodles with the remaining remaining broth. The noodles should be just covered by the liquid.
    5. To cook the noodles, set your pot to pressure cook for four minutes.
    6. Meanwhile, while the noodles are cooking, in a medium bowl, use a whisk to combine together the sauce ingredients.
    7. When the noodles are done cooking you can carefully drain the noodles of the broth (you can keep the noodles in the pot).
    8. To finish making the dish, place the vegetables back into the pot with the noodles. Drizzle the olive oil over the ingredients and then toss to cover the other ingredients.
    9. Set your pot to sauté for three minutes. Then stir in the sauce.
    10. Stir in the remaining ingredients before serving.

    Expert Tip 👉 When placing the noodles into the pot, place them in criss-crossed layers. This will hep prevent the noodles from clumping together.

    Once they have fully cooled, the leftovers can be stored in an airtight container. When properly stored, this dish should keep refrigerated for about three days.

    • 1 tablespoon Sesame Oil

      Love this recipe! One of my son's favorite homecooked pasta dishes is Kung Pao Pasta, which is something similar to this with the spicy sauce and peanuts.
