Bell peppers were used to make my stuffed peppers as they are large and and come in different colors. When selecting your peppers, make sure that they are firm and fresh so that they can hold the other ingredients when being cooked.
More helpful tips for you.
- In the first step in this recipe, water is added to help prevent the instant pot from burning on the bottom. You can alternatively use a soup stock such as vegetable stock instead.
- White rice was used in making my stuffed peppers. You can use another rice, such as brown rice, or a similar grain instead.
- Using canned diced tomatoes adds flavor, color, and texture to this dish. You can use a flavorful diced tomato, such as Rotel, instead of basic diced tomatoes.
- If you are not a fan of monterey jack cheese, you can use about and grated cheese or combination of cheeses. I like cheddar or mozzarella for this recipe.
- Try using a premade seasoning, such as Homemade Fajita Seasoning, instead of what was used in making my peppers.
- This recipe is a great way to use rice that has been leftover from takeout or another meal.
How to make Instant Pot Stuffed Peppers
Prep Time: 5 minutes .
Bake Time : 10 minutes, not including pressuring/de-pressurizing time .
Servings 4 .
- Start by placing your trivet insert into your Instant Pot. Then add the water to the pot.
- Place your cooked rice into a large bowl. Then add the diced tomatoes, (1 cup) of shredded cheese, garlic, chili powder, cumin, garlic powder, onion powder, and paprika to the bowl and toss the ingredients together so that they are combined .
- Use a scoop or large spoon to scoop the mixture into each of the peppers so that each pepper has about the same amount of the mixture in it.
- Transfer the stuffed peppers into the pot so that they are upright as you want to avoid the filling spilling out. Then sprinkle the remaining cheese over each of the stuffed peppers.
- Attach the lid to your pot and ensure the valve is in the sealing position. Then set your Instant Pot to cook on 'Pressure Cook-High' for 10 minutes.
- Allow the pressure to release naturally for 10 minutes. Then you can switch the valve to venting and allow any additional pressure to release.
- Serve the peppers garnished with chopped cilantro or parsley or as desired.
Expert Tip👉 The rice should be pre-cooked, using the method of your choice, and cooled before adding it to this recipe. This is because the rice and the stuffed peppers cook differently and should not be cooked together in this recipe as doing so can soften the pepper walls too much to hold the ingredients.
How to store stuffed bell peppers.
Once your peppers have fully cooled, they should be stored in an airtight container standing up. When properly stored stuffed peppers should keep for about three days refrigerated or up to a few months when frozen. ,
