What you need to make Za’atar Seasoned French Fries
- Potatoes. Your potatoes should be peeled or cleaned and then sliced into matchbook (thin) fries. Yukon gold potatoes were used to make my fries.
- Olive Oil. Extra virgin olive oil was used to make my fries.
- Za’atar Spice Blend Store bought or using the recipe provided below.
- Salt. Use a more flavorful salt such as Kosher salt.
- Pepper Freshly ground preferred
Za’atar Seasoning Blend
- Dried Thyme.
- Sumac.
- Dried Oregano.
- Sesame Seeds
- Salt.

How to make Za’atar Fries
- Prep Time: 10 minutes .
- Bake Time: 30 minutes .
- Servings: 6 .
- How to Serve: Serve with yogurt sauce, tahini dressing, or your favorite ketchup.
- Notes: You will need a Large mixing bowl, knife, rimmed baking sheet, parchment paper, measuring spoons, a small bowl, and spatula or tongs to make this recipe.
- Prepare. Preheat your oven to 450°F. Also, prep a rimmed baking sheet for nonstick. Parchment paper, foil, or a baking mat can work in this recipe. If you have not done so, prepare your potatoes as indicated.
- Combine. Place your cut fries into a large bowl. Drizzle half of the olive oil (about one and a quarter tablespoons) over the fries and then sprinkle a tablespoon of the Za'atar seasoning over the fries and toss the ingredients. Repeat this process using the remaining olive oil and seasonings (salt and pepper included).
- Transfer. Transfer the combined ingredients to your prepared baking sheet. Evenly spread the ingredients out in your prepared baking sheet.
- Bake. Bake the fries for 10 minutes. Carefully use a spatula or similar item to toss the fries so that the bottom sides of the fries are facing up. Continue to bake for 10-15 minutes or until the fries are golden brown and crisp to your liking.
- Serve. Let the fries sit on the baking sheet for a couple of minutes before transferring to serve. You can transfer the fries to a plate lined with a clean paper towel if you fries appear to be oily.

Tips for making the best Sheet Pan French Fries
When selecting a potato to use in this recipe, select a potato that can hold their shape when baked with. Good potatoes include Yukon Gold potatoes which offer a buttery texture or russets that can yield crispier fries.

- When you sliced your potatoes into fries, make sure that the fries are a similar size. This will allow the fries to bake more evenly.
- For crispier fries, You can soak the potatoes in cold water for 30 minutes before baking to remove excess starch and achieve extra crispiness. Patting the potatoes dry with a clean paper or kitchen towel also helps as it helps to remove excess moisture.
- Optional add-ins for this recipe include additional seasonings, such as smoked paprika, or sprinkling cheese on top for cheesy fries.

How to store oven baked French Fries.
Once the fries have fully cooled, they can be stored in an airtight container. When properly stored and refrigerated, they should keep for up to a few days. You can reheat these fries in an air fryer at 380°F for 3-5 minutes. To prevent your fries from getting soggy, make sure that they are completely cooled before storing and avoid reheating them in a microwave.
