    Ingredients needed to make Crockpot Chorizo Queso Dip.

    • Ground Chorizo. Your chorizo should be cooked, crumbled, and then allowed to drain (a small stack of paper towels work well).
    • Queso Blanco Velveeta Cheese. Your cheese should be cut into one inch (or so) cubes.
    • White American Cheese. Also cubed. I have seen this (unsliced) at my local warehouse club and deli departments at grocery stores.
    • Cream Cheese . Use a full fat cream cheese for a creamier dip. This too should be cubed.
    • Diced Tomatoes with Green Chiles. Use the canned stuff without draining it.
    • Evaporated Milk. Added to help the dip not get too thick in consistency.
    • Chopped Pickled Jalapenos. Added for a bit of heat in the dip.
    • Seasonings . Paprika, cumin, garlic, salt and pepper to taste.

    Tips for making the best chorizo dip.

    My dip was made with actual chorizo sausage that was cooked, crumbled, and drained. You can alternatively use taco meat (ground beef/turkey/chicken with taco seasoning) or a precooked meat such as turkey sausage.

    1. As a reminder, your chorizo should be cooked, crumbled, and drained before adding it to this recipe. This recipe is not intended to cook meat.
    2. My dip was made in a large crock-pot. If you do not have a large slow cooker (such as a six quart), you can cut the ingredient amounts in half and make this in a smaller cooker.
    3. Make clean-up easier by using a slow cooker liner.
    4. When serving at a gathering this dip it is a good idea to keep the slow cooker on 'warm' and stir it occasionally as it could thicken making it hard to serve.
    5. To thin out your dip stir in a small amount of evaporated milk or beer.
    6. 'Velveeta Cheese' is used as the fat content in it provides a smooth and creamy base. An alternative to using this is to use a cheese blend such as colby jack. You can adjust the texture by stirring in a bit more cream cheese if needed.
    7. Overcooking your queso can make it greasy or gritty. The secret to success in this recipe is to cook it low and slow.
    8. You can make your queso even more colorful and flavorful by adding additional ingredients such as roasted poblano peppers, minced garlic, chopped onions, drained canned corn, or beans.

    How to make Slow Cooker Chorizo Queso Dip.

    Prep Time: 10 minutes .
    Slow Cook Time: 2 hours 10 minutes .
    Servings: 16 .

    1. Cook and crumble your chorizo if you have not done so. Then allow it to drain (I like to let min sit on a small stack of clean paper towels for about 10 minutes). Then transfer the chorizo to your (large) slow cooker.
    2. Stir in the remaining ingredients with the cooked chorizo.
    3. Cover your slow cooker and set it on low heat.
    4. Cook the dip until the cheese has melted, stirring about every 15-20 minutes. It should take about one and a half to two hours to fully melt the cheeses.

    Expert Tip 👉 This recipe is meant to be cooked at low setting. It is recommended that you do not use the high setting as it will likely burn your ingredients and ruin your tasty dip.

    How to store chorizo cheese dip.

    Once it has fully cooled, you can transfer your chorizo dip to an airtight container. When properly stored, this dip should keep for about three days refrigerated or up to three months when frozen.
