Honey mustard potatoes are potatoes that are baby potatoes that are cooked with honey and mustard, along with a few other ingredients, to make a flavorful potato side dish.
I like how cooking these potatoes slowly in a slow cooker makes them even more tender and flavorful than using other methods.

More helpful tips.
- My potatoes were cooked in a six quart Crock Pot . Depending on the size of your Crock Pot or slow cooker, cooking times can vary. For the quantity of ingredients used in this recipe, a large slow cooker or crock pot is recommended.
- Maple syrup can be used instead of the honey (vegan option). You will however need less of the maple syrup than you would need of the honey. It is a good idea to taste and then make adjustments as needed.
- Can you make this recipe is a small slow cooker or crock pot? Yes, but, you will need to adjust the ingredient quantitates (start by halving everything).
- Do you have to use dijon mustard in this recipe? You can use the mustard of your choice. I like stone ground mustard or a flavored mustard (think holiday season!) for this recipe too.
- Because these potatoes are slow cooked, they will be softer and more flavorful than oven roasted potatoes. Oven roasted potatoes will be more crisp on the outside and less flavorful than these potatoes.
- If you want your potatoes to have a crispy outside you can transfer them on to a baking sheet to bake in the oven after they have slow cooked for four or five hours.
