    • Baby Potatoes. Red, gold, or a combination of baby potatoes. Your potatoes should be washed and then cut in half.
    • Butter. The butter should be melted. If you are using unsalted butter you can add a half teaspoon of salt, such as Kosher salt.
    • Mustard. Dijon or stone ground mustard taste great in this recipe.
    • Honey. Any kind of honey should be okay in this recipe.
    • Garlic. Minced garlic should be used.
    • Seasonings as desired. Salt and pepper were used to make my potatoes.
    • Optional- chopped parsley for garnish.

    Use fresh potatoes for best results. Baby potatoes are used because they are bite sized, making them easier to cook to a similar consistency.

    1. My potatoes were cooked in a six quart Crock Pot . Depending on the size of your Crock Pot or slow cooker, cooking times can vary. For the quantity of ingredients used in this recipe, a large slow cooker or crock pot is recommended.
    2. Maple syrup can be used instead of the honey (vegan option). You will however need less of the maple syrup than you would need of the honey. It is a good idea to taste and then make adjustments as needed.
    3. Can you make this recipe is a small slow cooker or crock pot? Yes, but, you will need to adjust the ingredient quantitates (start by halving everything).
    4. Do you have to use dijon mustard in this recipe? You can use the mustard of your choice. I like stone ground mustard or a flavored mustard (think holiday season!) for this recipe too.
    5. Because these potatoes are slow cooked, they will be softer and more flavorful than oven roasted potatoes. Oven roasted potatoes will be more crisp on the outside and less flavorful than these potatoes.
    6. If you want your potatoes to have a crispy outside you can transfer them on to a baking sheet to bake in the oven after they have slow cooked for four or five hours.

    How to make Slow Cooker (Crock Pot) Honey Mustard Potatoes

    Prep Time: 10 Minutes .
    Cook Time: 6 Hours .
    Servings: 8 .

    1. Start by preparing the bottom of your slow cooker for nonstick. You can grease it or use a slow cooker liner for example.
    2. Place the potatoes into your slow cooker. Evenly spread them out as much as possible.
    3. In a mixing bowl, use a whisk to combine together the remaining ingredients (butter, mustard, honey, garlic, and seasonings).
    4. Pour half of the whisked ingredients over the potatoes and then toss the ingredients together. Then pour the remaining whisked ingredients over the potatoes and toss again.
    5. Place the cover on to your slow cooker and then set the time to cook. You can cook these potatoes on high for two hours or low for four to six hours.
    6. Your potatoes will be done when they are tender and cooked through. Since tenderness of potatoes can be a personal thing (some like their potatoes more tender than others), it is a good idea to test your potatoes with a fork.
    7. Serve your potatoes with the garnishings of your choice.
