    Besides being hearty and easy-to-make, turkey enchilada casserole is the perfect layered casserole that brings out all of the flavors of enchiladas in one dish.

    What you need to make enchilada casserole with turkey

    • Turkey You can use ground turkey or cooked leftover turkey. If you are using already cooked turkey (such as leftovers) simply shred the turkey or cut it up into small pieces.
    • Onion Your onion should be diced into smaller pieces.
    • Garlic The garlic should be minced.
    • Black Beans. Use black beans that have been drained and rinsed.
    • Diced Tomatoes. Use canned diced tomatoes with green chilis. You can drain off any excess liquid from the can.
    • Red Enchilada sauce. Adds moisture, color, and flavor to this dish.
    • Seasonings. Chili Powder, Ground Cumin, and salt and pepper.
    • Corn Tortillas Use small tortillas that have been cut into quarters.
    • Mexican Blend Cheese Shredded.

    How to make Turkey Enchilada Casserole

    • Prep Time: 20 minutes .
    • Bake Time: 30 minutes .
    • Servings: 6 servings .
    • How to Serve: Serve with Optional toppings such as sour cream, green onions, chopped cilantro.
    • Notes: you will need a 9x13-inch baking dish and a large skillet to make this recipe .

    1. Prepare. Preheat oven to 375°F and prep your baking dish for nonstick. My baking dish was lightly greased.
    2. Cook. If your turkey has not been cooked, in a large skillet over medium heat, cook the ground turkey and diced onion until the turkey is browned and cooked through (about seven to eight minutes) . Then add the garlic and cook for another minute. If your turkey has already been cooked, simply just cook the onion until translucent (about three to four minutes) and then add the garlic and cook for another minute.
    3. Combine If your turkey has already been cooked, add it to the skillet along with the black beans, diced tomatoes, enchilada sauce, chili powder, cumin, salt, and pepper. Simmer the ingredients for five minutes. Note that if you have just cooked your turkey, leave it in the skillet for this step.
    4. Layer. Place a layer of tortilla pieces on the bottom of your prepared baking dish (half of your tortilla pieces). Top the tortillas with half of the mixture from the skillet and sprinkle half of the cheese over the mixture. Repeat this step with the remaining ingredients.
    5. Bake Cover the casserole dish with aluminum foil and bake the casserole for 20 minutes. Then uncover the casserole and bake another 10 minutes until the cheese is bubbly.
    6. Set. Allow the casserole to sit at room temperature to set for 10 minutes before serving.

    Tips for making the best Turkey Enchilada Casserole

    This recipe allows your to use ground turkey that can be cooked in the skillet that is used. However, this recipe is the perfect recipe to use up cooked turkey, such as from Thanksgiving. Simple shred or cut the cooked turkey into small pieces and add it to the skillet with the ingredients in the third step.

    More helpful tips for you.

    1. This recipe can be prepared in advance. Simply cover the casserole with foil, refrigerate the casserole, and then let it sit at room temperature for five to ten minutes before placing it into the oven.
    2. Corn tortillas are used instead of flour tortillas because they are sturdy enough to hold up to baking with the other ingredients. Flour tortillas are soft and can break apart when combined with the other ingredients and baked.
    3. While my casserole was made with turkey, you could alternatively use chicken, beef, or even veggies, making adjustments as needed.
