While not required for this recipe, you can choose to soak your potatoes to remove excess starch (this can prevent soggy chips). Simply soak the potato slices in a bowl of cold water for at least 30 minutes, or up to 2 hours. Then drain and pat the potatoes dry to remove the excess water
