Hamburger soup is hearty, thick, and creamy with everything thing we love about a cheeseburger in a comforting bowl.
I like that this is basically a filling soup that can be served as a meal in itself.

What you need to make Cheeseburger Soup.
- Russet Potatoes. Your potatoes should be peeled and then diced.
- Yellow Onion. Chopped into smaller pieces.
- Carrots. Your carrots should be shredded.
- Celery. Diced.
- Broth. Beef Broth gives moisture and flavor to this soup.
- Ground Beef Use lean ground beef .
- Italian Seasoning.
- Garlic. Minced.
- Salt and Pepper
- Cheddar Cheese Shredded for better melting.
- Flour. Added for thickening.
- Milk. Adds to the creamy texture.

How to make Cheeseburger Soup in a Slow cooker.
- Prep Time: 10 minutes .
- Cook Time: 3 to 4 hours .
- Servings: 6 .
- How to Serve: Serve warm in a bowl.
- Notes: You will need a skillet and large slow cooker to make this recipe .
- Vegetables. Place your diced potatoes, chopped onion, shredded carrots, and diced celery into your slow cooker. Stir in the beef broth, Italian seasoning, garlic, salt, and pepper and then cook on low until the potatoes are fork tender (about three hours).
- Beef. After two and a half hours of slow cooking, preheat your large skillet on medium-high heat (you can add a half tablespoon or so of oil if you are using lean beef) for a couple of minutes. Evenly spread out the beef and cook until browned, flipping the beef as needed (about eight to 10 minutes).
- Gravy. Carefully drain any fat from the skillet and then stir in the flour and cook for a minute and a half. Then stir in the milk, constantly stirring, until the mixture thickens and resembles gravy (with ground beef in it).
- Combine. Carefully transfer the ingredients in the skillet to the slow cooker and then stir in the cheddar cheese.
- Slow Cook. Continue to slow cook until the cheese has fully melted and the ingredients are fully combined (about an hour).

Tips for Making the Best Cheeseburger Soup.
Russet potatoes are used in this recipe because of their texture and ability to thicken this soup. Alternative potatoes that you could use include Yukon Gold or White Potatoes.
More helpful tips for you.
- When slicing or dicing your potatoes and other ingredients, do each ingredient so that each piece is a similar size. This will help them slow cook more uniformly.
- Lean ground beef was used to make my soup to keep the added fat down. You could use another ground beef but, be sure to drain it well to keep the fat in this soup at a good level.
- During the last half hour of slow cooking, if you soup appears to be very thick you can cover the slow cooker. For soup that is too thin, you can remove the cover to help thicken it.
- Optional add-in for this soup include cooked bacon, sliced green onions for serving, and other veggies such as peas.

How to store cheeseburger soup.
Once the soup has fully cooled, it can be stored in an airtight container such as your slow cooker crock with a lid. When properly stored, cheeseburger soup should keep for up to four days when refrigerated or frozen for up to a few months. When frozen, the texture may need a bit of blending using an immersion blender when reheating.
