- Chicken Broth. Adds flavor and moisture to the soup.
- Onion. Diced into pieces.
- Garlic. Minced or cut into small pieces.
- Seasonings- Taco Seasoning, Fajita Seasoning, or a Southwest Seasoning. I have a variety of seasoning blend recipes here or you can use a Mexican seasoning blend.
- Cream Cheese. Use a full fat cream cheese that has been softened to room temperature or cut into cubes.
- Heavy Cream. Helps make this a thick and creamy soup.

Tips for making the best Chicken Tortilla Soup
The chicken is slow cooked with the other ingredients. When the chicken is done cooking, you can take it out of the slow cooker and use two forks to shred it before returning it to the slow cooker.

- This soup can be made as mild or as spicy or hot as you want to make it. For a bit of heat, you can add a bit of hot sauce or chopped jalapeño.
- Plain Greek Yogurt can be used as a substitute for the heavy cream. Using a full fat cream cheese is preferred for the creamy texture in this recipe however,
- Use canned beans in this recipe for easy and because they are already prepared. Make sure that you beans are drained and rinsed however before adding them to the slow cooker.
- Can you use precooked chicken, such as rotisserie chicken to make this recipe? Sure but, slow cooking time will be different as the chicken is already cooked. It is best to keep an eye on the soup while it slow cooks.
- If your soup seems to be too thick you can stir in additional broth or cream.
- For soup that is too thin, you can remove the lid in the last half hour of slow cooking to thicken it up.
How to make Crockpot Creamy Chicken Tortilla Soup
Prep Time: 15 minutes .
Bake Time : Cook Time: 6-8 hours (low) or 3-4 hours (high) .

- Prepare. Prepare your ingredients as indicated. This include slicing, dicing, and rinsing.
- Chicken. Place your chicken breasts into your slow cooker.
- Ingredients. Add the beans, corn, tomatoes, onion, garlic and seasoning to the slow cooker.
- Broth. Pour the chicken broth over the ingredients in your slow cooker.
- Slow Cook Cover your slow cooker and cook on low for six to eight hours or on high for three to four hours or until the chicken is tender and cooked through (no pink and 165f internal temperature).
- Shred. Use two forks for shred the chicken. You can do this in the slow cooker or carefully remove the chicken from your cooker and transfer it to a clean cutting board and then return the shredded chicken to the slow cooker pot, stirring to combine.
- Cream. Add the cream cheese and heavy cream to the slow cooker. Give the ingredients a quick stir and then cover and slow cook on low until the cream cheese is melted (about 15-20 minutes).
- Serve. Stir the soup and then serve it with desired toppings such as cheese or tortilla strips.
Expert Tip👉 Stir your ingredients occasionally as needed. Towards the last hour of slow cooking it is a good idea to keep an eye on things. You can turn your slow cooker down to low or 'keep warm setting' if needed.
How to store Creamy Chicken Tortilla Soup.
Once your soup has fully cooled, it can be stored in an airtight container. When properly stored, this should keep for up to four days when refrigerated. If you choose to freeze this soup it is best to do so without the added cream cheese and cream.
