    Ingredients needed to make Enchilada Casserole in a slow cooker.

    • Chicken Breasts. Boneless and skinless chicken breasts.
    • Enchilada Sauce You can use the sauce of your choice.
    • Black Beans. Use cooked (canned) beans that have been drained and rinsed.
    • Corn. Such as frozen corn.
    • Onion. Diced into small pieces.
    • Seasonings. Ground Cumin, Garlic Powder, and Chili Powder.
    • Corn Tortillas. Your corn tortillas should be cut into strips.
    • Mexican Blend Cheese Shredded- freshly shredded is preferred.
    • Optional Ingredients For Serving. Chopped cilantro, sour cream, diced avocado, and salt and pepper to taste.

    Expert Tip 👉 Corn tortillas are recommended in this recipe as they are sturdy enough to hold up to slow cooking. If you want to use flour tortillas, I would stir them in to the casserole just before serving instead or use them as is and fill them with the casserole.

    How to make this Crockpot Enchilada Casserole Recipe

    Prep Time: 15 minutes .
    Slow Cook Time : 4 hours (on low) .
    Servings : 6 servings .

    1. Chicken. Place your chicken breasts into your crockpot or slow cooker. In a small bowl, use a whisk to combine together your seasonings. Evenly sprinkle half of the seasonings over the chicken, flip the chicken over, and then sprinkle the remaining seasoning.
    2. Enchilada Sauce. Pour one cup of the enchilada sauce over the chicken. Then use the backside of a spoon to evenly spread the sauce over the chicken.
    3. Slow Cook. Cover your slow cooker and cook on low for three to three and a half hours or until done .
    4. Shred. When your chicken has finished cooking, carefully use two forks to shred it. You can transfer the chicken to a work area, such as a cutting board. The place your chicken back into your slow cooker.
    5. Combine. Stir in the black beans, corn, onion, and tortilla stripes. Then pour your remaining enchilada sauce over the ingredients in the slow cooker. Lastly, sprinkle your shredded cheese evenly over the ingredients, cover the slow cooker and slow cook on low for another 45 minutes to 1 hour, (or until the cheese is melted and bubbly).
    6. Serve. Your can serve your enchilada casserole as is or with your favorite toppings.

    Tips for making the best chicken enchilada casserole.

    Boneless and skinless chicken breast was used to make my casserole. Chicken thighs can be substituted.

    1. Your chicken is done slow cooking when it reaches an internal temperature of at least 165℉ and is pull-apart tender
    2. This recipe also works with other ingredients such as ground beef. However, cooking times will vary as a result.
    3. Shredding chicken is as easy as pulling it apart using two forks. If you are having trouble doing this your chicken may not be done cooking.
    4. Not sure if your chicken is done cooking? The salsa can keep the chicken red or pinkish even when it is done cooking. Chicken is done cooking when it reaches an internal temperature of 165°F (74°C).

    How to store slow cooker chicken.

    Once your chicken has fully cooled, it should be stored in an airtight container. When properly stored, this chicken should keep for a couple of days refrigerated or frozen for up to a few months.
