Ingredients needed to make Beef Bourguignon in a pressure cooker.
- Beef Chuck Boneless chuck roast cut into 1 ½ -2" cubes or pieces.
- Bacon. Uncooked and diced into small pieces.
- Onion. Diced into small pieces.
- Garlic. Your garlic should be minced.
- Carrots. Cut into 1" pieces.
- Potatoes. Use baby sized potatoes that have been cut in half.
- Red Wine. Basic dry red was used in my Bourguignon.
- Beef Broth. Basic beef broth was used in my dish.
- Tomato Paste. Adds to the texture and flavor.
- Worcestershire Sauce Added for a bit of flavor balance and for a richer flavor.
- Mushrooms. Your mushrooms should be sliced.
- Olive Oil Used for sautéing.
- Seasonings. Dried thyme , bay leaf, and salt and pepper as desired.
- Flour. This is optional but, can be used as a thickener if needed.
Tips for making the best beef bourguignon
Traditional beef bourguignon is made with burgundy or a similar dry red wine. To make this dish without the alcohol you can use red wine vinegar or a non-alcoholic red wine.

- Beef chuck is commonly used as it has good marbling that results in a more tender and flavorful pressure cooked meat.

How to make Easy Instant Pot Beef Bourguignon
Prep Time: 20 minutes .
Cook Time: 1 hour 10 minutes (includes the pressure build-up and release) .
Servings: 6 .
- Bacon. Set your Instant Pot to the sauté setting and then cook your bacon pieces until crispy. Once your bacon is crisp (about four minutes or so) you can carefully transfer it to a clean paper towel to sit.
- Beef. To sear (quickly brown) your beef, place the beef pieces into the pot with the leftover bacon and grease and cook the beef until browned on the outside. You can use a wooden spoon to flip or stir the beef as needed. When the beef has browned you can transfer it to a plate or clean location to sit while you continue.
- Sauté Drizzle olive oil in your pot (if needed) and then then sauté the diced onion and minced garlic until softened (about three to four minutes).
- Deglaze Add the wine to your pot and use your wooden spoon to scrape up any browned bits on the bottom of the pot and then let the wine come to a simmer (three to four minutes).
- Ingredients. Add your tomato paste, beef broth, Worcestershire sauce, thyme, and bay leaf to the pot and stir. Then add the beef, bacon, carrots, and potatoes and stir again.
- Pressure Cook. Secure the lid on pressure cooker and then set it to the "Pressure Cook" or "Manual" setting on high pressure for 35 minutes. Once done, allow a natural release for 10 minutes, then perform a quick release for any remaining pressure.
- Mushrooms. The mushrooms will need to be sautéd on your stovetop while the ingredients are pressure cooking. While the beef is cooking, you can sauté your mushrooms using olive oil until browned.
- Serve. When the ingredients in your pressure cooker are done cooking, you can stir in your sauteed mushrooms along with any desired seasonings and serve.
Expert Tip👉 For a thicker sauce, remove about ¼ cup of the cooking liquid and whisk in 2 tablespoons of flour. Stir this mixture back into the pot and set the Instant Pot to sauté, cooking for another 5 minutes until the sauce thickens to your desired consistency.
How to store Beef Bourguignon.
Once your Beef Bourguignon has fully cooled it can be stored in an airtight container. When properly stored, it can keep for up to four days refrigerated or up to a few months when frozen.
