- Chicken Breast. Your chicken breast should be trimmed and also cut into cubes that are about one to two inches
- Bell Peppers. Red, yellow, and green. The peppers should first have their stems and seeds removed before slicing them into strips.
- Onion. Also sliced into strips.
- Lime Juice. Freshly squeezed lime juice is preferred.
- Heavy Whipping Cream. Added for creamy moisture and to balance out the ingredients as a result.

- Shredded Cheese. My casserole was made with monterey jack cheese however, you could use the cheese of your choice such as cheddar or blend.
- Cilantro. Added for garnish.

My chicken fajitas were made in a basic 9X13" casserole dish. You can alternatively make yours in separate or individual baking dishes or even in an oven proof cast irons skillet, adjusting the baking time as needed.
More helpful tips for you.
- You can make this recipe even easier by using precooked chicken (like leftovers or rotisserie). You will be able to cut down the baking time using chicken that is already cooked!
- Use freshly shredded cheese rather than store bought cheese for optimal blending.
- While my casserole was made with chicken breast, you can use other parts of the chicken such as thighs.
- This recipe can also be made with sliced beef, shrimp, or even vegetarian with just the peppers, onions, and toppings. Baking times can vary however,
- Keep an eye on your casserole while it is baking to make sure that it is not overbaked. Your casserole is done when the filling is bubbly.
- This recipe can be served over rice or with tortillas for a traditional fajita meal.

How to make Chicken Fajita Casserole Bake
Prep Time: 10 minutes .
Bake Time: 30 minutes .

- Prepare. Preheat your oven to 400 and prep your baking dish well for nonstick. Also, prepare your ingredients as indicated above.
- Chicken. Place the chicken in a large bowl with the seasoning and use your hands to toss the chicken in the seasoning. Then transfer the chicken to your prepared baking dish, evenly spreading it over the bottom of the dish.
- Peppers and Onions.Evenly spread the sliced peppers and onions on top of the chicken.
- Top Layer. Top the peppers and onions with the heavy whipping cream and lime juice. Then cover the ingredients with the shredded cheese.
- Bake. Bake your casserole in the center of your oven for 25-30 minutes or until the chicken is no longer pink and the cheese is melted.
- Set. Let the casserole sit at room temperature for a couple of minutes before serving.
Expert Tip 👉 Your chicken is done cooking it reaches an internal temperature of 165°F (74°C) and is no longer pink.
How to store Chicken Fajita Casserole
Once your casserole has fully cooled it can be stored in an airtight container. When properly stored and refrigerated, fajita casserole can keep for up to three days.
