What is Oven Roasted Skillet Turkey?
Oven Roasted Skillet Turkey is a method of cooking turkey (such as bone in breast) in an oven using an oven-safe skillet rather than a pan.
I like how skillet roasting this turkey is so much easier than pan roasting.
Have you seen my recipe for Easy Pan Gravy for Turkey?
That Easy Pan Gravy for Turkey is full of great flavors and takes less than 20 minutes to make. You can actually make easy pan gravy using the skillet that you used to make this turkey breast in (about as easy as it can get!).
To make this recipe you will need an oven-safe skillet such as a cast iron skillet. You can find a selection of oven-safe skillets here.
Why we love skillet roasted turkey breast.
This oven roasted turkey breast is tender and juicy, flavored with garlic and herbs. It is also the perfect centerpiece for your thanksgiving or holiday meal.
Here is what else we like about this recipe.
- Oven roasting in a skillet makes the skin nice and crisp unlike other methods.
- This turkey breast is the ideal size for a small gathering of people.
- Using a thick bottomed oven-safe skillet helps make the cooking of the bird more even.
- Making turkey breast means not having to deal with preparing the other parts of the bird.
- This turkey takes about an hour to bake in the oven.
- Classics herbs (rosemary, thyme, and sage) and garlic are used to give this moist turkey breast the perfect flavor.
Ingredients needed to make turkey breast in a skillet.
- Turkey Breast. Three pound boneless skin-on turkey breast was used for my turkey. It is a good idea to use a clean paper towel to pat off any moisture from your turkey breast.
- Butter. Your butter should be softened to room temperature.
- Olive Oil. A similar flavorful oil such as avocado oil can be used instead.
- Seasonings Kosher salt and black pepper.
- Herbs (freshly minced preferred)- sage, rosemary, and thyme.

Tips for making the best oven roasted turkey breast.
Boneless skin-on turkey breast was used to make my turkey. You can use a bone-in turkey breast for better flavor and moisture however, cooking time will differ so it is best to keep an eye on your turkey breast while it roasts.
More helpful tips for you.
- Using a frozen turkey breast is fine in this recipe but, the turkey should be allowed to fully thaw first.
- Both butter and oil are used in this recipe for moisture and for browning. I would not use just one in this recipe.
- Fresh herbs are preferred for better flavor. While you can use dried versions, the flavor may not be as robust.
- My turkey was roasted in a cast iron skillet. If you are using a different kind of oven safe skillet, cooking time may differ as cast iron skillets tend to be thicker and heavier than other skillets.
- Allow the roasted turkey breast to rest before slicing. This resting period lets the juices redistribute, resulting in a more flavorful and tender meat.
- Make sure that you use the leftovers in your skillet, as well as the skillet, to make my Easy Pan Gravy for Turkey for your turkey breast.
How to make Oven Roasted Skillet Turkey Breast
Prep Time: 20 minutes .
Bake Time: 1 hour .
Servings: 4 .
- Prepare.Preheat your oven to 375 and prepare your defrosted turkey as indicated. This means patting the skin dry using paper towels.
- Rub. In a medium sized bowl, use a whisk to combine together the butter, oil, minced garlic, seasonings, and herbs to make a rub. Gently lift the skin away from the turkey without removing it and use your hands to rub the mixture between the skin and the meat. Then use a pastry brush or similar item to coat the outside of the skin with the mixture . (I like to wear food prep gloves to do this).
- Roast. Carefully place your turkey breast, with the skin side up, on to your oven safe skillet. Then place the skillet into the center of your oven and oven roast until done, about 50-60 minutes.
- Serve. When done oven roasting, you can carefully remove the turkey breast from your oven and allow it to sit for 15 minutes before slicing. This is a good time to make your pan gravy.
Expert Tip 👉 Your turkey is done cooking when it reaches an internal 165°F (you can use an instant read thermometer). Generally speaking, you can cook the turkey breast for about 20 minutes per pound– or until it reaches 165F. I recommend checking your turkey breast around 50 minutes into roasting and then every 10 minutes after that until it’s done!
How to store turkey breast.
Once your turkey breast has fully cooled, it can be stored in an airtight container. When properly stored, the turkey should keep for up to three days refrigerated or up to a few months when frozen.
